My version of "Chopped"

This last week I was soooo busy.  By the time I got home from work I didn't want to cook anything that took very much time at all.  Also, I hadn't gone shopping yet and didn't have very many ingredients.  Here is a recipe that I created using just 5 items!

First I discovered a can of cantalini beans (a white, mild, soft version of kidney beans).







My mind started working a mile a minute to see what I could make (think Chopped).  I found a can of stewed tomatoes, and onion, and some white rice.  I also had a couple of leftover BBQ pork sausages.

1.  Brown the onion in a little bit of olive oil.
2.  Add the beans, tomatoes, a dash of salt, and a dash of chili pepper.
3.  Steam the rice.
4.  Warm the sausages.
5.  Served the bean mixture over rice with a suasage.

Now, I know this recipe sounds a little bit strange, but it was so yummy!  You may want to try it!
